Which ingredients should not be added to a vegan soup?

To keep a soup recipe vegan, there are a few ingredients you should avoid adding to your ingredients list:
Meats: Beef, chicken, pork, turkey, and seafood. You can sub these out for plant-based meats such as Beyond Meat, Impossible Meat, Soy Chorizo, etc.
Dairy: Vegans don’t eat milk-based products such as milk, heavy whipping, cheese, yogurt, etc. Thankfully, nowadays, there are vegan alternatives to pretty much all of the dairy-based ingredients mentioned. If you want to make a soup creamy, I recommend using a can of full-fat coconut milk.
Some types of noodles: While noodles and pasta are typically vegan, you need to double-check the ingredients list. Sometimes, there are noodles that use eggs as the pasta base and eggs are not vegan. I usually try to use chickpea or some sort of plant-based option.

How do you properly store and freeze vegan soup recipes?

Whenever I make a huge batch of one of these vegan soups, I always like to store some in my fridge to eat throughout the week, and then I store the rest in the freezer for another week in my meal plan.

To store soup in the fridge

Choose and make your favorite soup recipe and enjoy! If you happen to have any leftovers for a few extra meals, store the rest of the soup into air-tight storage containers and store them in your fridge!

To store soup in the freezer

Cook your soup and then allow it to cool down to room temperature. Depending on the kind of soup, I will then pour the cooled soup into freezer-safe containers or food storage bags. Make sure to not fill them up to the rim. When soups freeze, they tend to extend a bit in the container. Double-check the container is fully sealed so no air can get in (this helps avoid freezer burn). Then, stick them into the freezer until you are ready to eat! When you pull it out of the freezer to use, make sure to leave it out a few hours before you plan to reheat and eat.
