Apple Crumble Ingredients

Cooking apples are of course the main ingredient for the filling. Some recipes offset the tartness of the cooking apples by also using eating apples or adding some sugar.

Plain flour is the most common type of flour used although Jamie and Delia introduce wholemeal and self-raising as alternatives. There’s also disagreement on salted versus unsalted butter and the type of sugar to use.

Rolled oatsare a nice addition to an apple crumble, but a handful scattered on top, rather than mixed in, so they toast, rather than cook into a stodgy porridge underneath.

Spices– ground cinnamon, ginger etc. – also work well in moderation. In fact, you can play around with flavourings as much as you like as long as you keep the mixture fairly light, and don’t overwork it.The Hairy Bikers’ two teaspoons of cinnamon does seem a little excessive but, as ever, it’s a personal thing. They clearly like their cinnamon.

Apple crumble should be quick, simple and served with … CUSTARD of course.

Delia Smith Apple crumble

Preparation time

Cooking time
30 mins to 1 hour

Serves
Serves 4

Dietary
Vegetarian

INGREDIENTS

  • 700g Bramley apples
  • 225g Cox’s apples
  • 25g light brown soft sugar
  • 1 level teaspoon ground cinnamon
  • ¼ teaspoon ground cloves

For the crumble

  • 75g chilled salted butter, cut into small dice
  • 175g self-raising flour
  • 1 level dessertspoon ground cinnamon
  • 110g demerara sugar
  • 110g whole almonds, skin on

To serve
Clotted cream or Isigny Ste Mere creme fraiche

EQUIPMENT

You will need an ovenproof baking dish measuring about 24 cm x 16 cm and 6 cm deep or similar.

METHOD

  1. Preheat the oven to 200ºC, gas mark 6
  2. Prepare the apples by cutting them first into quarters, then pare off the peel with a potato peeler (or leave it on, whichever you prefer) and slice out the cores. Now cut them into thickish slices and toss them in a bowl with the sugar, cinnamon and ground cloves, then place them in the baking dish.
  3. For the crumble all you do is place the butter, sifted flour, cinnamon and sugar in a processor and give it a whiz till it resembles crumbs. Next add the almonds and pulse, until they are roughly chopped and chunky. If you don’t have a food processor, in a large bowl, rub the butter into the sifted flour until it resembles crumbs, then stir in the cinnamon, sugar and almonds, which should be roughly chopped by hand.
  4. Now spoon the crumble mixture all over the apples, spreading it right up to the edges of the dish, and, using the flat of your hands, press it down quite firmly all over; the more tightly it is packed together the crisper it will be. Then finish off by lightly running a fork all over the surface.
  5. Bake the crumble on the centre shelf of the oven for 40–45 minutes, until the topping is well browned and crisp. Leave it to rest for 10 minutes before serving with well-chilled crème fraîche or clotted cream.
