poriyal recipes are my favourite side dish recipes and i always make it for my weekend lunch and dinner. i make with several combinations of veggies like cabbage, corn, carrot, broccoli, yam and okra. the best part of the poriyal recipe is, it can be mix and matched to make a combination of poriyal recipe. in addition, the recipe can be made in a jiffy with fewer ingredients and spices. yet the end result can compete with any creamy rich tomato and onion based curry. i personally end up making this curry when i am not in a mood to make some fancy and lengthy curry recipes for my dinner as a side dish to roti and chapati.

Ingredients
- 4 tsp oil
- 1 tsp mustard
- 1 tsp urad dal
- 1 tsp chana dal
- few curry leaves
- 2 dried red chilli
- ½ onion, finely chopped
- 2 chilli, slit
- 2 cup carrot, chopped
- 2 cup beans, chopped
- ½ tsp turmeric
- 1 tsp salt
- ¼ cup water
- ½ cup coconut, grated
Instructions
firstly, in a large kadai heat4 tsp oil and splutter 1 tsp mustard, 1 tsp urad dal, 1 tsp chana dal, few curry leaves and 2 dried red chilli.
add½ onion,2 chilli and saute until onions shrink slightly.
further, add2 cup carrot, 2 cup beans,½ tsp turmeric and 1 tsp salt.
stir-fry for 2 minutes, or until spices are well combined.
add¼ cup water and mix well.
cover and cookfor 15 minutes, or until vegetables are cooked well yet retain their shape.
now add½ cup coconut and mix well.
finally, enjoy carrot beans poriyal with hot steamed rice along with saaru.

- firstly, chop the vegetables of uniform size for uniform cooking.
- also, make sure water is evaporated completely before adding coconut. else, the poriyal will not be dry.
- additionally, onions can be skipped if you do not prefer.
