HEALTHY OATMEAL PANCAKES

I might be the onlymother out there who dreaded back to school today. I loved having three weeks of leisure and fun.

I love the laid back morningswhen there’s actually time to make a warm breakfast and enjoy it rather than force feeding mykids before they rush out the door at 7am.

I was immediately drawn to these Oatmeal pancakes because I know how hard it is to please kids.

These have oatmeal in the batter which gives them an incredibly hearty texture.

There’s only 1 tablespoon of sugar in the pancakes so you can totally deem them as healthy. Of course Ipoured syrup all over mine but that’s neither here or there.

You can definitely top them with yogurt and fruit, applesauce, peanut butter and jelly,or jam.

Of course pancakes smothered in syrup aren’t healthy but at least you can make the actual pancakes with less sugar and then the syrup is all up to you in this recipe.

Healthy Oatmeal Pancakes

These Healthy Oatmeal Pancakesare hearty and filling.

Servings: 12 pancakes

Ingredients

  • 2 cups quick oats, (see Note for substitution)
  • 1/2 teaspoon baking soda
  • 2 1/2 cups buttermilk, (see Note for substitution)
  • 1 cup flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 tablespoon sugar
  • 1/3 cup vegetable or canola oil
  • 2 eggs, beaten

Instructions

  • Combine oats, baking soda, and buttermilk. Let mixture stand for 5 minutes.

  • In another bowl combine flour, baking powder, salt, and sugar.

  • Add the oil and eggs to the oat mixture and stir to combine.

  • Add the dry ingredients to the oat mixture and stir until blended.

  • Cook on lightly greased griddle or skillet.

  • Top with syrup, yogurt, fruit, applesauce, peanut butter, or jam.

Notes

Quick Oats Substitute: If you only have old-fashioned oats pulse them in the blender briefly to chop them up slightly and then you have quick oats!

Buttermilk Substitute: Substitute buttermilk with 2 1/4 cups milk and 2 tablespoons white vinegar or lemon juice. Let mixture sit for 5 minutes or until it appears to curdle.

    I really liked this recipe! I’ve been looking for a good healthy pancake to make myself. For my personal preferences, I only added 1 cup of oats (crushed) and 1 cup of milk. I also added some unsweetened applesauce, honey, and spices such as nutmeg, cinnamon, ground cloves, and allspice. I honestly think this recipe would still be good if it didn’t have the sugar. I mean, most things you would use as toppings are sweet. For example, I topped mine off with some syrup and sautéed apple chunks covered with cinnamon. Over all, I loved this recipe and will definitely used it again and maybe add mashed banana too!

    These pancakes have been a staple in our family for almost 5 years! I love doubling the recipe to batch make and freeze these. They’re hearty and the perfect amount of sweetness. We love the texture, flavor, everything!

    I’m eating healthier and this was very good! I live alone and halved the recipe. I made 6 pancakes and will freeze the rest. Added a little cinnamon.

    Do I have to make the whole batch? I probably used 1/4 of it. Can I store the rest of the batch and make them as I eat them or make the whole batch and just store them?

      I would make the whole batch and freeze the cooked pancakes.

    I will admit, I was a bit skeptical of these because the batter was so thin. However, after only a few minutes in the pan they puffed up to normal size. These are the most delicious pancakes I have ever made at home. They taste like the ones at breakfast house and are so easy to customize. They also browned perfectly in the pan, which is usually something I have trouble with when I make oat pancakes. I will be making these again!

    These look and sound utterly delicious! I especially like how high in fiber they are.

    Two questions:

    1) What heat do you cook them over (medium)? I know it’s usually medium heat or slightly above but don’t want to assume.

    2) What amount of batter do you pour out for each pancake (1/8 cup, 1/4 cup…)?

    Sooooo yummy. My favorite oatmeal pancake recipe by far! I also added a mashed banana and a tablespoon of ricotta cheese. I will always use the version.

    Even after adding almost a whole cup of extra flour and oats, these are still paper thin. And the taste is not so great. Definitely won’t be using this recipe again. Thanks for sharing, though

    Tbh I almost didn’t make these because of the association with the Duggars (can’t stand them) but the pancakes are the bomb. My boys love them. They are our go to pancake recipe.

    Ive tried a lot of oatmeal pancakes and this is a keeper. I finally found a recipe that i love. I did make some changes. As with previous comments,i soaked the old fashioned oats in buttermilk overnight. It made a big difference. I also added 2 mashed bananas and 3 tsp powdered peanuts for extra protein. The batter is thinner compared to the original. But thats how i like it. Thank you very much.

    YUM! I made them gluten free by simply replacing the wheat flour with gluten free flour and a pinch of xanthan gum. I did use old fashioned oats, I soaked them for about 30 minutes. Fantastic. For gluten free, remember to always use certified gluten free oats.

    I made this recipe for the first time today; however, I tweaked it using ingredients on hand, so suffice to say I cannot comment on quite the specific recipe. I used old fashioned oats and soaked them for longer than 5 minutes. As I did not have any flour in the house, I used approx 1.5 T of coconut flour. In place of buttermilk I used whole plain yogurt (1 cup) with 1.5 cups of water and a bit of vinegar to curdle things a bit more. In place of sugar I used a smidgen of honey and also added about 3 T ground flax and about a cup of blueberries. They were a big HIT and I do thank you for, err, the basic recipe. My family will often ask “Jennie did you actually FOLLOW the recipe?” No, not quite, but I made do with what I had available and USUALLY it turns out!

    Christy, can you substitute ‘Steel Cut Oats” for the Quick Oats? If so, how?

      Steel Cut Oats have a totally different texture so I’m not sure that they would work here.

    Well….I’ve just made these and I am quite disappointed tbh 🙁 I know that what you call pancakes in US is not exactly the same as what we call pancakes in Europe… We make pancakes that are more like the french crepes. We have a smaller a thicker version that we call a different name though – I thought it is going to be something like that. But this is way too far away from both of these concepts … I just tastes wrong, sorry 🙁 Especially the buttermilk in it. And I love buttermilk, but in here….it just doesn’t work for me. I made two pancakes and than threw it all away. It’s not exactly disgusting but is just tastes wrong and I know my bf wouldn’t eat it :-/

    Can we eliminate baking soda??
    If yes, will the result still be the same?

      Baking soda is a leavener so the results will be different without it.

    I always mix the oatmeal and buttermilk the night before and let it sit over night in the fridge too. (I can’t tell any difference between using quick or old fashioned oats this way) My recipe also calls for cinnamon. The best toppings for these pancakes (and make them not so healthy anymore!) is buttermilk syrup or Nutella. The Nutella makes them taste like a chocolate chip oatmeal cookie. So yummy!

    I made these the other night and they were very good. I did kick them up a notch, I added cinnamon to the batter and then added mini choc. chips to some and raisins also. Tasted like warm choc. chip oatmeal cookies!

    We’ve been making a similar recipe for a number of years. They are the greatest pancakes ever. We use the old fashioned oats . We mix up the oats and buttermilk the night before and let them chill in the fridge overnight. It softens the oats really well and everything then seems to come together really quickly in the morning.
