hotel sambar recipe | sambar dal recipe | saravana bhavan sambar with step by step photo and video recipe. the south indian cuisine offers several sambar recipes which intersect with lunch/dinner and breakfast. in addition, there are subtle differences between the sambar prepared in a temple feast, in-house and in restaurants. this recipe post is dedicated to the hotel style, typically served in a thali like in saravana bhavan.
i have posted several sambar recipes including for rice and for south indian breakfast recipes. but this recipe is unique compared to my previous one, especially with the sambar powder or masala. basically with all the dry spices in the masala, i have also added dry desiccated coconut and roasted it with other spices. adding coconut gives a nice texture and flavour to the sambar and that’s how hotel sambar recipe is prepared in restaurants. moreover, they even add powdered rice grains to masala or directly to sambar which helps to give thickness to sambar. but i personally do not like it and have not added here. but if you feel your sambar is watery or thin, you are free to add it and experiment. as such it does not have any change in the taste of sambar though.
furthermore, some easy and important tips and suggestions while preparing the hotel sambar recipe. firstly, in terms of adding veggies to sambar dal, it is completely open-ended and you can experiment with your choice of veggies. apart from the veggies, i have in this recipe, you can add eggplant, gobi, radish, okra and shallots. secondly, i have prepared the sambar powder as required for this recipe. but you are more than welcome to prepare it in bulk for later use. make sure to store them in an airtight container in a dry place. lastly, the consistency of sambar may grow thick as time passes. and hence you can add water to maintain the consistency before reheating it.

Ingredients
for sambar powder:
- 2 tsp oil
- 1 tbsp coriander seeds
- 1 tbsp chana dal
- ½ tsp cumin / jeera
- ¼ tsp methi / fenugreek seeds
- ½ tsp pepper
- 4 dried kashmiri red chilli
- few curry leaves
- 2 tbsp coconut, grated
for hotel sambar:
- 1 cup tamarind extract
- ½ tsp turmeric
- 1 tsp jaggery
- 2 green chilli, slit
- few curry leaves
- ½ onion, petals
- 5 beans, chopped
- 1 carrot, chopped
- 2 drumsticks, chopped
- 1 tomato, chopped
- 1 tsp salt
- 1 cup water
- 1½ cup toor dal, cooked
- 2 tbsp coriander, finely chopped
for tempering:
- 2 tsp oil
- 1 tsp mustard / rai
- 1 driedkashmiri red chilli
- few curry leaves
Instructions
in a kadaitake1 cup tamarind extract, ½ tsp turmeric, 1 tspjaggery, 2 green chilli and few curry leaves.
also, addvegetables and 1 tsp salt.
cover and boil for 10 minutes.
further, add 1 cup water and1½ cup toor dal.
boil the mixture well.
now add 3 tbsp of prepared sambar powder and mix well.
boil for 2 minutes or till flavours of sambarpowder is absorbed completely.
pour the tempering over sambar.
also, add 2 tbsp coriander leaves and mix well.
finally, hotel sambar is ready to serve along with hot steamed rice.

how to make sambar dal with step by step photo:
- firstly, in a kadai heat2 tsp oil.
- roast,1 tbsp coriander seeds, 1 tbsp chana dal, ½ tsp cumin, ¼ tsp methi, ½ tsp pepper and 4 dried kashmiri red chilli.
- also, addfew curry leaves and 2 tbsp coconut. roast for aminute.
- cool the spices and blend to a fine powder without adding any water. sambar powderis ready.
- now in a kadaitake1 cup tamarind extract, ½ tsp turmeric, 1 tspjaggery, 2 green chilli and few curry leaves.
- also add½ onion, 5 beans, 1 carrot, 2 drumsticks, 1 tomato and 1 tsp salt.
- cover and boil for 10 minutes.
- cook until the vegetableis cooked well. add water if required.
- further, add 1 cup water and1½ cup toor dal.
- mix well adjusting the consistency as required.
- boil the mixture well.
- now add 3 tbsp of prepared sambar powder and mix well.
- boil for 2 minutes or till flavours of sambarpowder is absorbed completely.
- prepare the tempering by heating2 tsp oil and splutter 1 tsp mustard, 1 driedkashmiri red chilli andfew curry leaves.
- pour the tempering over sambar.
- also, add 2 tbsp coriander leaves and mix well.
- finally, hotel sambar is ready to serve along with hot steamed rice.
notes:
- firstly, use freshly prepared sambar powder or store brought sambar powder.
- additionally, add vegetables of your choice to make sambar more healthy.
- furthermore, cook the vegetables before adding dal as it doesn’tcook later.
- finally,hotel sambar recipe tastes great when prepared slightly spicy.
